A typical dessert of Easter holidays, and that well expresses the territory of Garfagnana: the basic ingredients are simple and essential, flour, sugar, eggs, butter, raisins anise and yeast, the long processing, because it provides three days between dough, leavening and cooking! Holy Saturday then, as usual, takes to the church to bless, along with the eggs.


And in order not to lose the traditions and enhance this simple but tasty dessert, this year, in March, in Castelnuovo di Garfagnana, the 1st edition of the  contest "La pasimata d'oro garfagnina" is held, promoted by Slow Food Garfagnana and Valle del Serchio, association Buy in Castelnuovo and Confcommercio Lucca. The competition can participate, with very different assessments, the professionals of the bakery and the private, to enhance on the one hand the excellence of the ovens and pastry shops in the area for the best homemade pasimata, and to reward the other, the best pasimata among those "housewives" of the Garfagnana.


The race will take place on March 17th in two separate times: in the morning for the professionals, who will have to present their product by 6pm on Friday March 16th, and in the afternoon for the private sector, who will have to deliver their pasra within the 14 Saturday, March 17.
The sweets must still be prepared before the race, just to respect the processing times.


The jury, composed of members of Slow Food and Fipe Confcommercio as well as foodblogger, will have to evaluate some fundamental characteristics: taste, shape / appearance, color, perfume, softness / fragrance, cooking and finally the cut.
